
Underneath all of the gravy is a biscuit…

Not being a native Texan, I have not tried all that Texas cuisine has to offer. I was born in Wisconsin and grew up along the border where Mexican food is most prominent. Biscuits and Gravy are something I first saw my freshman year in college. I’d never heard of it and was not tempted to try. I’ve had biscuits. I’ve had gravy. Combining them just did not seem so appealing. Earlier this year, I tried it at home with a package of ready-made gravy. That was a satisfying meal, but I realized that packaged gravy may not give an authentic taste.
This morning, I thought I’d give the biscuit and gravy breakfast a try at the Capitol Grill, the cafeteria at work. I think I must have missed something. I don’t know about you, but I can imagine flavors. I think the biscuit and gravy would have tasted good with sausage. The first attempt at it, I had them with bacon; that was a better experience than just plain biscuit and gravy.
I twittered my experience and got a response from mdeleon. Apparently, sausage is a must-have with your biscuit and gravy. When I was searching for a photo for this post, I saw such a variety of the food in question. I could definitely dig biscuit with a mushroom gravy or a sausage gravy. I picked this flickr photo because it’s the closest to what I experienced.
I won’t let this experience affect my opinion about biscuits and gravy too negatively. I figure I just did it wrong. I will have to try again. If you know of a good place to have a good biscuit and gravy breakfast, I’d appreciate a comment. I live in Austin until the end of the month and will be headed for the Rio Grande Valley, passing through San Antonio. I’d make a stop based on a good recommendation.
